Carbon Steel Knife Care

Carbon steel requires a little more maintenance, but the benefits outweigh the extra effort.

NEVER leave knife in water or place in dishwasher.

Hand-wash and dry well.

After each use and before storing, apply a thin coat of Blade Butter Knife Wax or other food-safe knife oil.

Carbon steel will rust. When rust appears, scrub lightly with fine steel wool, wipe clean, and apply Blade Butter.
 

With time and use, a patina (a desirable oxidation layer) will appear. The patina colors will change over time and will help protect the blade from corrosive forms of rust.
