This Bunka-inspired slicer combines Japanese aesthetic with Western construction, making it a versatile and beautiful addition to any culinary arsenal. It features an ultra fine edge and a traditional octagonal handle. The blade measures 6 1/4 inches from the tip to the heel, and the overall length is 11 inches. With a blade thickness of 3/32 inch at the spine, it strikes a balance between precision and versatility. The hammer finished blade widens to 3-inches at the heel, allowing for efficient chopping and slicing.
With an in-house heat treatment that balances hardness and durability, the blade promises excellent edge retention and ease of sharpening. The full-tang handle features a combination of stabilized spalted maple and G10 liners. The spalted maple, sourced from Pensacola, adds warmth and character, while the G10 liners enhance durability and aesthetic. The pins securing the handle scales are made of G10, ensuring stability and longevity.
The Western Bunka includes a velvet lined poplar wood box.
